Step 1: Pick Eggplant

Step 2: Prepare Eggplant
Wash in cold water, peel, and chop the eggplant. Cut off the two ends about ¼". Chop into 1/3" cuts.
Step 3: Blanch Eggplant
Heat up the pot of water (filled 2/3 of the full level) and put in 1/2 lemon juice for every single gallon. In a big bowl, prepare cold water and ice. The blanching procedure destroys the enzymes and bacteria that would break the eggplant down after a while. Blanch by boiling the eggplant for 4 minutes, then take away with a perforated spoon and drop in the ice water. Have them there for about 5 minutes and drain.
